To set colors for members (by username) you'll have to use a code.

Can You Remove Any Of The Tabs?  I Don't Mean The Custom Ones, I Mean The Real Ones.

You can hide them using a code.

Go here..  Codes Index  check the Tab Codes Category for "Hide Tabs"

btw Moose posted a new code that you can use for the members colors that is simpler.
You'll find that under the Member Related category in that same Codes Index.
It is called "Color Username"

When I Add Mods, It Says That They Are Noobs In The Online List, And Noobs Everywhere Else They Go...
("Noob" Is The First Part To My Rankset)
And When They Are Online They Don't Have The Blue Color In The Online List.
(I Set The Mods To Have A Blue Color)
Why Does This Happen?

You can set the forum so that the post count titles do not show for the Regular Groups (non post count based)
Admin > Current Theme >  Hide post group titles for grouped members?   

Keep in mind that the title and rank image for a Board Moderator will show as the Moderator rank/image that you set up for the Moderator Group in the Boards that they are set to Moderate only.    
In the Boards that they are NOT set to moderate their title and rank image will be those of the post count based group they belong to.

Assuming you are talking about Board Moderators -  the color of their name in the online list will be the color for the post count based group they are in. 

If you want them to always have the same color you would have to create a new membergroup for them -  make it a Regular Group.   Set the color/rank Image/Permissions/etc for that Group.   Move them to that Group.   Or use Moose's Color Username Code.


Example to help with both of your questions:
Agent Moose is a Board Moderator for the Codes Board here.
When he posts in that board it says Moderator under his name and he has green stars
When he posts in other boards it says Code Master's under his name and he has yellow stars.
Hide post group titles for grouped members is checked here so that those in the Regular groups (i.e.  Administrator, Global Mods, Code Masters, etc) do not have the post group titles under their names.   
His name in the online list is always purple as purple is set for the Code Master's Group that he belongs to.
