My question is:

How much more does server 2 offer?

I'm mainly concerned with Layout Customization options.

So far, it seems as if the only way to make your forum look different from any other SMF forum, is to change the color.

So correct me if I'm wrong, but is it worth botching all of my layouts and customizations for the new features offered by Server 2?

And what exactly ARE these new features?

you can always make a test forum and check out the new options  ;). It  will make it on server 2 because SMF is no longer allowing signups on server 1


edit  actually if you upgrade you will still be on server 1 lol)

Well, upgrading does have a couple benefits.

For one you might notice a slight speed increase in your forum..and upgrading overall benefits the server.
Umm, you can see a couple of the Server 2 layout styles in the Manage Styles are. Most of the styles in there now are Server 2 only.
Server 2 offers customization similar to the Manage Styles area of server 1. In fact the Server 2 stylesheets are almost the exact same...just a couple things switched here and there. A couple more customization areas too.

If you did decide to change your forum over to server 2 you could easily keep the current stylesheet you have. The only thing you would lose are those buttons. The Home, Portal, Help, Search blah blah. They would be replaced with the tabs. (You can see the tabs here, http://demo.smfforfree2.com/ )

As suggested earlier in this thread making a test forum is one way to find out all 1.1.2 does have to offer.
There are many things in this version.

Child Boards -   the totals for the child boards will show up on the Main Index  (in 1.0 they do not)
Calendar      -    you are able to make an event in the calendar and not link it to a post
                          you can add new holidays to the calendar
Manage styles -  crasy already mentioned some things about manage styles.   
                          In 1.1 you can also access Customize Images, and change many of the images on your forum.
                           i.e.   the new and no new post icons... expand/collapse icons and many more
                          You still have access to edit your header/footer as you do now in 1.0
                          You can change how the tabs look by making new ones if you have some css knowledge you can do quite abit with the css to change things.

thats just a short list.. there is much more..   some of it security related such as setting how many posts a new member has to make before they no longer have to use captcha in the PM system.....   or setting how many pms an hour a person can send.. etc.
